Low Carb Blueberry Muffins

These low carb blueberry muffins have a dense, cake like texture and are pretty good. The reason I say "pretty good" is because the taste is more on the sweet side. So if you don't like really sweet things, they might be a little too sweet for you. On the other hand if you have a sweet tooth that's off the charts, you may really, really like them.
They are premade and make for a quick low carb breakfast or snack on the go. But if you’re home and have a few minutes to spare they are also perfect to slice in half and grill in butter or coconut oil. One point that's very much worth mentioning is that in an effort to keep the carb count as low as possible, they contain blueberry skins and not whole blueberries, none the less they are still good. I just wanted to make sure to give you a heads up, in case your heart is set on low carb muffins with actual blueberries.
Not only are these super blueberry muffins low carb, but they are also low fat and low calorie which can be a hard combination to come by. They are a bit on the small side but contain a decent amount of protein which will help you stay fuller longer. All in all from a carb stand point (only 2 net carbs) they are the best low carb blueberry muffin option.
Note: They are highly perishable so they can't be left out at room temperature. They only last a couple of days in the fridge but will stay fresh in the freezer for up to 6 months.

If you don't mind some light baking this is perfect for a weekend breakfast or an afternoon snack. The mix only requires water and butter (you can substitute coconut oil if you prefer). So you can quickly whip up a batch of delicious, low carb blueberry muffins with minimal effort. The end result will be a batch of delightfully, light and fluffy low carb muffins that taste like they came straight from the bakery. And at only 4 net carbs per muffin that works for me.

Although these are slightly higher in carbs than the Dixie or ThinSlim Foods muffins, they are still very much low carb blueberry muffins when compared to traditional muffins. On the plus side they tend to be a little cheaper than the other two brands. They are very moist and have a good blueberry flavor and don't taste like they're low carb. While they do contain erythritol (which some people aren't a fan of as it gives some low carb baked goods a bit of an odd aftertaste) these muffins don't have that aftertaste.
Is it just me or when you hear the name Entenmann's you instantly start thinking of all sorts of delectable baked goods?
These blueberry mini muffins are a classic example. Despite being a premade, store bought baked good they somehow manage to be deliciously soft and moist. In my pre-low carb lifestyle days I'd never turn down a pouch of these treats. While they may not be freshly baked they still taste amazing (like pretty much all of Entenmann's goods do, okay maybe with the exception of their multi grain cereal bars...seriously what is up with those)?
Getting back on track...while these mini muffins are awesome, they are too high on the carb scale for me. To be fair they're nowhere near as high in carbs as a Dunkin Donuts blueberry muffin (which contains 76 carbs in you're wondering) but if your trying to cut carbs from your diet, I recommend trying one of the low carb blueberry muffin options listed above instead.
