These low carb blueberry muffins have a dense, cake like texture and are pretty good. The reason I say "pretty good" is because the taste is more on the sweet side. So if you don't like really sweet things, they might be a little too sweet for you. On the other hand if you have a sweet tooth that's off the charts, you may really, really like them.
They are premade and make for a quick low carb breakfast or snack on the go. But if you’re home and have a few minutes to spare they are also perfect to slice in half and grill in butter or coconut oil. One point that's very much worth mentioning is that in an effort to keep the carb count as low as possible, they contain blueberry skins and not whole blueberries, none the less they are still good. I just wanted to make sure to give you a heads up, in case your heart is set on low carb muffins with actual blueberries.
Not only are these super blueberry muffins low carb, but they are also low fat and low calorie which can be a hard combination to come by. They are a bit on the small side but contain a decent amount of protein which will help you stay fuller longer. All in all from a carb stand point (only 2 net carbs) they are the best low carb blueberry muffin option.
Note: They are highly perishable so they can't be left out at room temperature. They only last a couple of days in the fridge but will stay fresh in the freezer for up to 6 months.
